The Golden Rules

 

Always

  • Use freshly ground coffee (Drury’s of course!)
  • Use cold milk when frothing
  • Clean your machine regularly
  • Leave empty group handles in the group heads

 

Never

  • Leave a full, unused group handle in the group head
  • Overheat milk when frothing

 

Definitions


Espresso - Classic black Italian coffee – small and strong.
Approximately 6-7 grammes of coffee and 25-30 ml of water


Ristretto - A smaller, stronger version of espresso.
Approximately 7-9 grammes of coffee and 15-20 ml of water


Espresso Doppio - A double shot of espresso - twice as satisfying!
Approximately 14-18 grammes of coffee and 50-60 ml of water


Espresso Lungo - A long espresso - milder than the traditional version.
Approximately 7-9 grammes of coffee and 30 ml of water


Americano – A standard espresso topped up with hot water making a milder “filter-style” coffee.
Approximately 7-9 grammes of coffee and 100-110 ml of water Cappuccino - The famous Italian “frothy” coffee, served with steamed and frothed milk and a sprinkle of chocolate. Made with one shot of espresso, which should be 1/3 volume, plus 1/3 steamed milk and 1/3 frothed milk


Caffè Lattè - Coffee blended with steamed milk and a little foam.
1/4 coffee and 3/4 steamed milk


Macchiato - Espresso coffee with a dash of cold milk.
A standard espresso with a very small amount of cold milk added to “mark” the surface (hence the name).


Mocha – Coffee blended with steamed milk and chocolate
1/3 coffee, 2/3 steamed milk and a shot of chocolate syrup.
